MAME is the one emulator I approve of as someone who's personally anti-enulation simply because legally getting arcade games is unfeasible compared to just buying an official disc or cart of a console game. I agree with what they're doing as long as the game that's being removed has an official release that people can buy.

arcade games largely have different hardware per-game, so each game needs specific support
that being said, you can a: use a different emulator version, or b: rename the roms you have as if they're a different game that runs on the same hardware

Why is arcade such a mesa to emulate? Every time I get a different Arcade emulator, I have to look for at least 4 versions of a ROM in different websites until the emu picks up whatever ROM feels like running. Whenever I want to play a console ROM (or ISO), it's the same one no matter the website or the emulator I'm running, it will just work. How do you figure this out on Arcade games?

Reverse engineering, documentation and maybe even outright 'magic' at times.
A console has a known set of hardware and a known range of behaviors. Sure, a slim version might come out later, but you know it will keep compatibility with the original one. For arcade machines, though...
Think of each arcade cabinet as its own console. At least before 'interchangeable boards' like CPS1/2, Triforce, NAOMI were created.
A cabinet will have its own cpu, memory layout, sound processor, and special chips depending on the type of game. When MAME boots a game it pops up the hardware info for that cabinet's system.
And it's not just one ROM like how it works with consoles, a machine has several ROM chips and you need all of them in order to play the game properly (this is why most MAME roms come in zipped files, and the emulator takes care of sorting that stuff out for you).

As to why you need to try multiple versions, there's no real standard or format we can rely on since every machine is unique in itself, so the emulator is probably expecting a format or filename set different than what you downloaded.
MAME has its own internal 'list' so it can work out most basic errors by its own, but it's not perfect.
