Steins;Gate, Fate/stay Night, Higurashi, Muv-Luv.
Avoid Fate/Stay Night, it's shit. The other picks are solid and I'd also add Saya no Uta
Keep Fate/Stay Night, it's actually good. Also add Muramasa.
Tsukihime, Saya no Uta, Yume Miru Kusuri, Katawa Shoujo
FSN is good, it's still one of my favorites despite a few nitpicks I can make. Arguably overrated but I think people are too contrarian about it. Everything fate beyond the original VN sucks though including Zero.
Add Ever17 to other VNs. It's the Citizen Kane of "what a twist" visual novels
F/HA is pretty good too and is arguably better than F/SN.
Fate Stay Night, Umineko, Steins;Gate MAYBE Muv Luv but it's hard to recommend to a newcomer because you basically read two full VNs of build up to get to the part people actually like.
The final route of Ever 17 is fantastic the problem is more the amount of grilled chicken sandwiches you have to go through to get there

Not really since his character isn't much of a focus like in FSN. He's more of a vessel to vicariously live in the town of Fuyuki and hanging out with the many different people there. It's a culmination of everything FSN has built up to with its characters and the last goodbye to them and Fuyuki. I wouldn't say it's a story that has HF Shirou in it at all given his lack of importance there.
