theres this area near the grafted spider thing that has a troll being hanged upside down and thats a pile of coprses under it with 2 dogs. the first time you get there there will be a letter you can give to roderika. after she goes to the roundtable hold, you can go back to that same spot and her hood will be there.

How do the helpless NPCs constantly move around this dangerous world unscathed? Why do all the monsters attack me but not them?

all that can be logically deduced from her monologue is that she got banished by her family along with a retinue of unknown size to Limgrave, where they would presumably offer themselves to Godrick so he can graft them. Her language insinuates they wanted to be grafted and there was some cultural peer pressure to walk into that deathtrap, but her survival instinct was kicking in through the indoctrination, so she lagged behind or got separated somehow and they went ahead and became chrysalids (corpses that are destined to be grafted?). Then, in one of many plotholes in this game, she somehow finds the roundtable hold (a place where tarnished who possess the guidance of grace go to, and supposadly one where no tarnished visited in eons), the roundtable hold and her discovered talent of spirit tuning made her cling more to dear life.

So, to cut it short, she didn't want to get grafted. That's why she's alive.

As if it matters anyway. Fromsoftware is only capable of making NPCs that stand in place and repeat one line at a time anyway. They think making a game more isolating makes it hardcore and misses the fact that it makes the world less immersive and reminds you that you're playing a video game.
