Every other "gotcha" criticism I've seen is absolutely debatable and defensible

I think constantly upping the stakes to the point where you're always up against some apocalyptic event will lead to drying up your story of any interest or fear faster than anything. A quest that's only about character development on their off day that accidentally leads to the main course is my favorite stories. It's why I like the Hobbit more than Lord of the rings. Adventures that are just about the characters feels more genuine then stories about destiny, or war, or conquest.
