Generally speaking the main villain is usually physically stronger, faster, more magically blessed, and more intelligent than the main protagonists of a FF game.Or the main boss is just some big fuck huge unspeakable evil that's made less unspeakable by making it look like a hot lady, a giant fish, or a fucking tree.
The heroes usually spend most of the game one step behind and only win through the power of team work, love, friendship, and perseverance against evil usually after getting over some huge psychological block brought upon by some trauma that happened prior to the game.

That's something that happens after the end of the game and it's not the real Sephiroth nor even a real fight. Seph is dead at that point. It's something Cloud is imagining and it represents him obliterating the last speck of Sephiroth's influence over him. It dies in one attack.

We're constantly shown things that were in the original game. Here's Cloud dressed as a girl! Here's Aerith selling her flowers! Here's the bombing mission! Those parts are cool but take up 6 hours of the original game. They're showing absolutely nothing from the new content being introduced, barely any hint of what the game will focus on. When not on a mission, what do you do? Where's the Midgar gameplay where you walk around, talk to NPC's, interact with the world, get quests? Nowhere, they don't show it.

But Sephiroth? Here's fucking Sephiroth. Half the back cover of the game is fucking Sephiroth. That one month before release we have nothing else to go on should worry the fuck out of everyone. You forget that Cloud's mental state is very fragile and he regularly suffers delusions, hallucinations, and false memories from severe PTSD and major physical and mental harm from Hojo and Sephiroth's actions. Jenova's cells in Cloud's body grants Sephiroth a degree of control over him, so it's infinitely more likely that any appearances of Sephiroth prior to Jenova's escape are a combination of his influence and Cloud's trauma.

The reason the first flashback cuts as he prepares to fight Sephiroth is because that was Zack and Cloud only knew that Zack had attempted to fight him and his false memories couldn't reconstruct the rest because he was never there.

It was a big deal in the original that Cloud and Sephiroth never duke it out directly the entire game up till the mental battle with him at the finale where he both mentally got over his past and literally surpassed Sephiroth. The point of the directing and story was that Sephiroth himself was a twist, you went into the game not knowing he was even a important villain till the president gets done in and all you see left is the carnage. Then you encounter another "supposed" Sephiroth and once again only see carnage and aftermath. It builds expectation and hype for the finale over the course of three discs, dropping him around too early makes him a glorified "Remember Sephiroth? Look at this cool model we made of him because you're not gonna see his actual shit for another five years in part 2 3 and 4".

Aeris is present during this scene, it occurs inside the Shinra building or during its escape.

I just saw the Smash Cloud as I was posting that pic, he looks great compared to AC Cloud. And look closely at new Cloud, the bangs on the left side of his face are way too long, they frame his face like a girls bangs. All of his hair should be swept over to the right side, like a comb over, look above old-Cloud's left eye, all of his hair is swept over to the right. This is what they should've aimed for if they wanted a less-anime Cloud.

This past few days, I've been reading the script, noticing cool things I never noticed when I played it previously. The story of this game is legit good. It has some dumb entertainment things, but it's solid in it's approach and is filled with messages that are very late 90's early 2000's "fiction, full of (very entry level but still cool) philosophical or psychological themes.

Cloud's identity crisis, living in the shadow of Sephiroth (a guy that barely aknowledges him, then treats him like literal garbage, a clone, a puppet and a nobody, not even good enough for a number) is part of the theme. Writing that away is not me putting any "nostalgia google" on. It's me being able to look back at this and that's the theme of the story, it's what guides the writing of the dialogue between these characters and their very limited interactions. It makes sense. It fits the story.

Cloud's personality is a roller-coaster ride in more than one way.
It follows the original decently what I've seen, but since it is a remake it will have some changes and you've had Advent Children, Dirge of Cerberus and Crisis Core which added even more lore which will be referenced.
Personally, I'd say you can play both since they seem to deliver different experience.

Some banter was added, making Jessie more thirsty for Cloud for instance. Voice acting and facial expressions may change a lot of the original experience depending on how you interpreted the dialogue in the original, but I'd say what I saw in the demo was appropriate.
Barret was spot on. The "Stamp" stuff is new, apparently it's new stuff where "Stamp" is some kind of Shinra or SOLDIER mascot dog character.

The one major change in the demo compared to the original was Avalanche's bomb not doing jack shit so Shinra had to false flag it to make it seem worse than it was to control public opinion.

Honestly just go play the original so you can make a full comparison. The Midgar portion of the game only takes like 4-5 hours, which is what they're remaking into a full game now.

It's mostly because Tifa's outfit in the original seemed like it was just some summer clothing she found comfortable accessorized with her combat gear. There was no need for an explanation for her clothes because they were perfectly sensible, if a bit unintentionally sexy. The new outfit doesn't really make a whole lot of sense, especially considering their intention was to make her look "athletic."

The huge explosion is because its the reactor that explode not the bomb. The bomb simply made the reactor unstable. They even show this in the cutscene on the original game
