Being tall isnt much of an advantage to a ninja. Though with bosses they are all usually larger than they actually are for intimidation and boss design. I think FROM has said as much.

What's with miyazaki's obsession with making important characters freakishly huge. At least in Dark souls there was a lore justification (kind off), but in Sekiro it just makes no sense at all.
Same goes for Soulsborne games. MC are all manlets.

1. Making him look intimidating
2. Making his tells for his attacks much easier to read

FROM games always have boss/enemy characters that are larger than the protagonist, even if they should be the same size. Makes it easier to see the enemy and make reads about their movements/attacks.

Considering how big Isshin is compared to Sekiro, just imagine how titanically huge general Tamura would be compared to him considering he was big enough that Isshin had to climb him in order to get a good shot at his neck.

It's actually both ways. Sekiro is barely about 5ft tall. The other important and strong fighters are all well over 6ft or 7ft. It gets even wilder when you start comparing Owl, True Monk and the okami at over 8ft.
