It had cute waifus, and top-tier animations even though it was extremely short and gimmicky. Also the character models, while having low-res textures still came close to current-gen standards. Unlike Pokemon and Zelda doing a straight up hack job and not even trying.

IS tried really hard to get as much immersion down as possible, including adding full blown battalions to the map with hundreds of units. That right there is progress. They also spared no expense with the simple, but worthy drawn images in the game that helped bring context to the whole story. Not to mention the animations and long dialogs put in there with voice acting. Definitely a AAA title you got your moneys worth.

Pokemon and Zelda did none of that. They literally just copy-pasted the original into 3D and charged $60, yes $60 fucking dollars for it. They added virtually nothing. Sure, it's understandable if they wanted to keep the original core grid-style gameplay in, but if you're going to charge $60 for it, add in modern things that make it worth it like what IS did with FE.

It's almost as if both of those remakes were budget titles created to pad a library and weren't big multi-year production AAA products like FE3H was.

But Fire Emblem isn't a simulation of war, beyond it having that as a backstory.
It's a tile-based puzzle game in all its iterations.
You can argue tiles out of Zelda and make it a realistic depiction, and argue them out of Pokemon as well. However, "move x tiles in a turn" is core mechanic the franchise spins around.

Also, curiously, you didn't present positive examples for the remakes you'd accept and I don't think there's any Switch remake of FEs.

A remake doesn't have to look like the concept art of the original game. It's a remake. It can go in whatever direction the new team wants.
