I agree with this for the most part.
Most difficulty settings are just about letting shitters brute-force their way through games without having to use their brains and getting lucky or just having so many opportunities to overcome an obstacle that it happens eventually.

Did you ever consider that there might be people with varying skills when it comes to playing video games? It is a very good idea to include a difficulty setting because otherwise you will end up with a Reddit Souls situation where everyone thinks the game is hard because they are locked out of easy difficulty while the game is boring to everyone who usually plays on hard.
Difficulty settings are solely there to appeal to a wider audience and have no bearing on whether a developer is capable or not.
The fact they have settings for "difficulty of exploration" and "puzzle difficulty" is nice even if it's nothing particularly special.
If you kill Urizen early then you unlock the next difficulty immediately, but yes, fuck enemy DTs.

That only applies to "cinematic" games or very specific action games. Plenty of games use difficulty settings as a tutorial of mechanics that they introduce more or additionally in higher difficulties. Difficulty settings can also be a customization to make things purposely unfair for a challenge, like instant gameovers or high punishing to instant death on taking damage.
In today's era when you can watch a game on Youtube and all of its cutscenes, I think the "easy difficulties" especially on a lot of AAA simple games are outdated.
