Beat him last night you just got to stay close and keep hitting him. I also did the Temple before I got to him (didn't know that was supposed to be til later) so you can always go explore around if you want something else to do.
The Samurai in the room before him was harder, so you can do this.

Boss battles are never about depleting their health bar, lower hp just means they recover posture slower. As you chip away at their health and parry their shit it becomes easier to posture break them as each phase of the fight goes on

Parry everything. It's a rhythm game. Learn the pattern of his attacks. Get in swipes while you can to lower his health so his posture recovers more slowly and eventually you can stagger him.
He is absolutely the hardest boss you have faced up until that point but you've got a save point right in front of him and he basically teaches you how to play the game right.
Get funky, block his attacks like you're playing a rhythm game.

Man he is my favorite boss. The stage is so kino, no wonder they reuse it for two more fights. I remember being in your position OP. I had died probably about 30+ times to ol Genichiro. Then one night I was coming up on an acid trip and decided to try it. Right on the peak I was doing this fight again and my hands were fucking shaking and sweating but I had become so hyper focused on the game, it became like rhythm. Block block parry mikiri block block jump etc. It was trancelike. Then the last stage came and I had no idea what the fuck to do during his lighting attacks, I was flailing wildly. Luckily a jizo statue saved me and I beat the guy by the skin of my teeth. From that moment on the game "clicked" for me, I went back and beat the spear guy first try, the game stopped being so difficult. Became my favorite fromsoft game that night. You either learn the mechanics and the ebb and flow of the game at this point or you'll keep failing, Genichiro is the boss that forces you to understand the game. Now almost a year later I dont even find him that hard.

Dodging has its uses, but for Souls veterans who are used to respond to everything with dodging, yeah it's pretty much a trap. Enemies in Sekiro have a shitload more tracking than in any Souls game, and they have shittons of chaser attacks that will catch you when you're trying to back away. Sekiro doesn't want you to back away, it wants you to stay close and accurately respond to every enemy move with the proper counter, be it parry (most common), mikiri (semi common), jump (semi rare) or dodge (rarest).

After beating him you will understand a lot of mechanics and everything will start to make sense to you. Also when attacks with lighting just jump and press R1 a lot of times before landing, you will end up deflecting his lighting

it's like the naginata guys in the straw uniform. lots of spinning around and slashing but if you deliberately wait 1 second, swing, wait one second, swing again, you will randomly interrupt them (you need to parry when they attack as well ofc)
also sabimaru helps get that first chunk of health down but you really don't even need it

dodge doesn't move you far enough away in most cases and it seems to have very bad iframes compared to souls rolls
