Castle Crashers! Final boss, the Wizard, is pretty easy, but just takes awhile. The boss before him, the Necromancer, spawns a fuckton of buffed enemies at once and gangbang you if you fuck up your juggles

The real issue is that game devs think big has to mean slow. And slow inherantly means easy.
Souls is the perfect example, big slow monsters all have telegraphed attacks that literally spell out "dodge for iframes here retard". Meanwhile fast bosses are all the biggest challanges.

There's some truth behind it, and necessity, too.
Look at a dinosaur for the more egregious of examples. It could take up to a minute for the nerves to get a full signal for a brontosaurus to move its own tail. 60 seconds of "man, I sure do want to move eventually."
That's the biggest offender of all time, but it would scale similarly with normal enemies. An average human reaction to something they see is .25 seconds. Something three times human size could very well be .75 seconds.

The difference is that they also vastly underestimate how much force would be behind that movement.
Looking at the average punch, it goes about 20.44 miles per hour, and generates 3427 newtons of force at impact. Now imagine it's moving at the same relative rate for something three times human size. 61.32mph, which brings it to 10,281N, right?
WRONG
Because that nigga is fucking massive and the square-cube law comes into effect. The long and short of it is this:

So your average man (197.9 lbs) just became ((197.9 x 8)(8 / 2)) pounds. 6332.8 pounds! Over three tons of enemy.
Now apply that to the force of the punch adjusted for the dude's size.

For reference, a car crash at the same speed with a car that weighs less than a third of this theoretical enemy is 490,914N.

So an enemy 3 times the size of you could punch you with the force of three cars hitting you all at once while going a little over 40mph.
If they weren't slow, there wouldn't be a game. It'd be a game over just getting one mad at you.
Also it's more fun dodging big attacks than small ones.
