Usually your units can hold their own against one or two enemies, maybe even more. But an Est will need babying, however it will usually be worth the effort.

Not really. There's no reward for overkill in Fire Emblem, so there's really no advantage in investing resources to eventually get a 'great' unit when a 'good enough' unit with a much lower opportunity cost will get the job done just as well.

You don't need to do it, but giving yourself a bit of challenge, feeling the happiness of getting good level ups and using characters that you like are three reasons why someone might train an Est.

I understand why someone might do it, I do it myself from time to time, but the idea that using your trainees is good, optimal, or even worthwhile leads inexperienced players astray and makes the games more difficult for them than need be.

It pays off, even if it is only for a handful of maps that the Est will be stronger than your other units.

I'm about to finish Eliwood's story, what's the difference between that and Hector's story? Should I even bother with it?

Only bother if you want to play the game again. The difference is two maps and one or two extra chapters, I believe.

By a few stat points at most. In Nino's case, she'll arguably never be better than Pent due to the staff rank inequality. Of course, FE7 enemies are so wimpy that anyone can be a juggernaut if you put as much investment into them as it takes to make Nino competitive.

She's good for ranked runs, though.

Hector's story also has two characters that you can't recruit in Eliwood's story, but they really aren't essential. One is another pegasus knight who is okay but you already have enough of them and the other is a secret character that you can only recruit near the end of the game and you are almost certainly not going to successfully recruit without a guide unless you've played FE6.
