Have you considered that maybe he already did recalibrate them... to screw them up and get his viral video? Alternatively it could easily be done with a wireless joycon connected to the system.
Considering you can get millions of views from a video of this shit, I wouldn't put it past people to fake it.

It's largely a dust issue, more than not using it roughly it's more about not leaving it in the open when you're not using it. Leave a dust cloth on it, or put it in a drawer or something. While many controller handle this better, it's generally something you should do with any of them.
