It's a kind of trade-in for the sake of not making the games boring as shit. Canon-wise, most monsters are so endangered by the time that Geralt is around that people just see them as curiosities of a time gone by.

The majority of the world of the Witcher is free from monsters. They are quite rare and only are active because of the wars blood shed.

There is nobody living on undvik, the natives don’t return in the game, once Geralt clears the giant, it’s pretty safe too

novigrad countryside is full of monsters, even the sewers have drowners and rotfiends
the entirety of velen is crawling with monsters
skelligan countryside has cyclops rolling around, and the mountains have nekker societies

that's alot more monsters than "all gone"
