Only Junko never put out the established rules and made shit up as she went along. The whole class trial and what happens to the blackened was something she hid until after the first murder occurred. No way a fair host would leave a detail like that out.

so technically, for the first few days, somebody could have just taken a knife and stabbed everybody else to death and won

Also keep in mind that she planned to kill someone before Monokuma introduced the class trial rule, so unlike Hifumi, who actively knew that getting away with murder would kill everyone, Sayaka thought she would only be killing one person and that was it.

Celestia would die before telling anyone her identity. He knew because of the hit to his head. If you read DR0 and played DR2, you'd know that the memories aren't permanently erased and can be recovered. In DR2, Makoto and the others have all their high school memories back.
