A lot of the most undetailed and laziest looking comes from the 80s, unironically. It's also weird that you use K-ON as an example when it's generally praised for its detailed artwork (backgrounds mostly) and high budget animation. I personally don't like the anime KyoAni makes but they've always been at the top when it comes to high budget TV anime visually. They haven't even produced an actual moe anime since 2010.
Watch more older TV series and less OVAs and movies and you'll realize just how much less detail most older anime actually had, and ran on a shoe string budget. Especially in the early 90s when budgets were at an all time low.
You're acting like low detail anime designs are a recent phenomenon, when the vast majority of anime has low detail designs to begin with.
That's the entire point of the basic manga/anime character "artstyle" that's united the entire medium since the 70s and onwards. Anime characters are easy to draw because they're meant to be low detail.

While I agree with your sentiment, mecha's biggest modern flaw isn't the CGI, but the writing.
There just aren't any innovative mecha shows anymore. The last good one was the Fran waifu one, and before that Iron Blooded Orphans in fucking 2015.
Both anime didn't relay on doing impressive mecha action, but offered a good story.

Inferior complex toward Japanese animation industry and the fact that since 90s most of western animations were heavily influenced by Japanese animation in terms of animation style, technic, and arts style. Now most of them look like a chinese copy of Japanese animations except for some old series that's been there. Heck, you can say even "calArts" was created with influence of Bryan Lee O'Malley who professed that his art was influenced by manga such as Takahashi Rumiko.
By the way, this complex feeling is also the reason why in the western fandom the debate "whether ot not western cartoons can be call as anime" is sometimes becoming fierce and tense and some people stubbornly anime call "cartoon".
