Each Ace Combat is unique in his own way :

-6 have the narration
-7 have good visual

I only played AC4, I have 5 installed on pcsx2 though, should I play it or go back to 3 or maybe 2 first?
2 is the most similar to 4
3 and 5 are each their own thing
3 is completely different from any other game in the series since it's pure scifi and anime. Personally I didn't like 2 at all, it feels like a really awkward transitional period between the pure arcade stuff of 1 and the more fully featured experiences 4 and 5 offer. I'd recommend just playing the PS2 trilogy and then continuing to wherever you want from that.

What the fuck? 2 is basically an improved version of 1. It's better in literally every aspect. If anything, 3 is the "transitional" game.
5 is extremely similar to 4 and in the arcade mode you even play as Mobius One because they didn't bother on changing anything else on a rushed release where the only concept they barely explored and over exploted was the Razgriz
AC3 is the real shit, different feel from any other in the saga and you can see it has the most work put on it. The missions, the atmosphere, the OST is Einhander tier

In a pure mechanical sense sure, but the mission design results in a completely different gameplay experience. 5 is definitely the most scripted of the AC games I have played (haven't played 6 or 7)
The dynamic of missions changes because the implementation of wingmans in the game, and that makes it more unique than the lone YF22 obliterating yellow planes because they're bad until you kill them.
I like the change they made focusing on the people rather than on war itself on 5, but the sensation you get is rather the same
sad they didn't improve on anything on 6 and even less on 7, story-telling wise, guess I'll stick to Zero and 3 as my all time favourites, you should give them a go
