Probably because they're THE franchise you think of when it comes to a mashup of dungeons, bosses, and story. Other games follow the formula (Darksiders, etc) but Zelda has been around for so long it defines the style. Sorta like Metroidvania has become the name for all the sidescrolling platformer/fighter.
