Just the official plugins, delayed dark brotherhood attack, and the code patch are all you really need. You don't need to mod the movement speed or hit chance or anything like that, those things are "fixed" by actually using game mechanics they give you instead of just holding W and spamming left click.

I just beat it for the first time. I enjoyed it, but that dungeon about halfway through the main quest where you need to activate a wall torch to reveal a new hallway was BS. That said I'm hard pressed to ever replay it since i feel it would just be more of the same no matter what kind of character build I start with. For example I got the impression that the game is unbeatable if you opt out of magic altogether, or conversely if you only want to use magic.
Morrowind and Oblivion are based. Oblivion for doing all content once. Morrowind is fun to go back to again and again. So much variety. So much opportunity. So much... content.

Haven't played that one, couldn't care less about the engine. I mostly like the game because of the hugeass dungeons.
it's an rpg but literally; so a big part of the game is learning how the rpg mechanics work, as well as reading and getting invested in the story etc one step at a time
one thing i noticed it do best is exploration - it really makes you prepare for your expeditions and you will have to learn the hard way a few times to know what you need to prepare for
once you learn the ropes it's easy mode but you earn it and it's very fulfilling for it makes you feel like a veteran adventurer
openmw vanilla playthrough sounds reasonable; in fact i'm going to install it right now

do not use levitate for traveling and do not mod the game with fast travel
what you need to do is create either enchanted objects or spells with the following effects
1. jump + feather + fortify acrobatics for 1 second
2. slowfall for 1 second
you will have to figure out the optimal ratios to get the most mileage, but you ought to be able to clear the entire continent within about 1 minute in 4 or 5 jumps before long
