The entire time I've been playing on my server, it's not affected me. In fact, it's actually helped. I was questing in Tanaris, but there were so many other people that I couldn't get my quest done. Guildie invites me to their layer, which was nice and empty enough that we could knock out an entire string of quests pretty quickly.

Imagine there are 10 Silver veins in Westfall. With their respawn timers, and players competing to find them, thats a certain amount of Silver Ore per day from Westfall. It is a finite small amount.
Now add 10 layers. Thats 10 instances of Westfall. Each has 10 Silver veins. Oh no. This means 10x Silver Ore in the auction house, means crap prices, means ruined economy.

Layering adds resources to the world. It adds more mobs that drop more stuff. All the gathering professions have very low prices because of this. Professions already were borderline worthless during leveling, now they are almost legit useless, since everything is so cheap.

The developers have given multiple interviews at Blizzcon and have stated the game is written in C, and they frequently use pointer manipulation for basically everything. Your character sheet, backpack, bank, and bags are all part of a static array and they manipulate the pointer to determine where to put a looted item and do checks on your proximity to a bank to determine if you're able to access your bank or not. When this works, it means your game will be super efficient memory and CPU wise and run on a toaster, but one small mistake and you just opened up an Olive Garden.

Back in the late 90s and early 2000s the idea of doing brittle things with pointers so your code could run on a weak computer was seen as a strength, "look how good our developers are, they were able to code X and run it on Y." We now know that maintainability is almost always the best quality to aim for when coding because stronger hardware will almost always eventually come out, it will almost always fix any performance problems, and the person changing this code in the future might not be you. Yes, some developers use this as an excuse to write pajeet tier code that is really inefficient, but your average developer will know "hmm, I could use a LinkedList or an array for this backpack/character sheet/bank system; I'll go with the LinkedList so it can be more flexible in the future, even if it takes up more memory now."

I also think they opened too many realms and they're going to have to end up merging smaller servers anyways which was exactly what they said they wanted to avoid by having layering.
