Thinking of getting into the Soulcalibur series by buying 2 and 3. Is there something I should know before buying them, and do I miss out on important lore by skipping the first two games?

yes but you should also not play fighting games for the lore
SC2 and 3 have fun story modes.
SC6 is a great game and there will be a big Season 2 Patch soonTM

the lore gets retconned every game.
Inconsistent and dumb the story is.

You mean the file corruption thing? That does sound troublesome. Maybe I'll have to get a new memory card to circumvent that, just in case.

Yeah, just make sure you put all the SC3 saves at the beginning of the card. And don't try to move or copy it.
