I'm replaying the original FF8 because the remake sucks. Haven't played this since I was a little kid and I have to say I have found new respect for Squall. He's actually an awesome guy and I completely understands why he's an "antisocial asshole". If I had to surround myself with fuckups like he has to I'd be a little grumpy too.

I don't get how Ultimecia is even allowed to attack? Just use Meltdown + limit and she should die immediately. The only attacks you should be seeing are 1 Shockwave Pulser and her final form's attacks because she doesn't die until her dialogue finishes
Well, the way my firend did it was: pop Holy War, spam Irvine's piercing shot for 9999 dmg (that whole thing when you have a set duration and can dish out as many shots as you can by pressing buttons) and Squall's whatever you call it.

The point is that this is the shit that goes through his head all the goddamn time, and that was the first time he couldn't just hold it in and say "Whatever" instead of what he actually meant. We had been seeing his internal monologue through the whole game up to that point, but for the others it was the first time he had more than two words to say about anything, and the first time he seemed to be emotional.

There's a LOT of direct evidence, across a variety of displays, backstory, dialogue, naming convention, story basis, etc. that clearly shows the intention they had that R=U. The writers for this game intends for the audience to make the suspicion that Rinoa and Ultimecia (or "Artemesia" translated anywhere outside NA) are the same person, time being the altering factor.
The ending literally contradicts each and every little piece of that HEADCANON FANFIC BULLSHIT.
Matron and Ellone gave their wizardry powers to Rinoa to protect her from Adel. Then Rinoa took power from Adel and Artemisia. Rinoa left to be the last and the most powerful witch in the universe. But Rinoa is NOT Artemisia or Adel, because Rinoa fell in love to Squall, unlike Adel and Artemisia which never felt any feelings and Adel being Centra to the boot (Odin comments on that), and humane side of Rinoa overtook her witch side. Rinoa is very powerful sorceress indeed, but ending clearly shows she's not going to become same as what Adel and Artemisia were. She essentially cancelled any possibility for another tyrannic sorceress' appearance, including herself turning into one.
He gets shit done even when he's not appointed to do it. It's pretty telling when during the Balamb internal conflict, he immediately started suppressing NORG's faction and outright forced Cid to leave the Garden defense to him ("Because you might screw up"). The guy may hate being the leader, but he is one.

Shumis are crafters, so they generally hide their hands and waving them is considered rude and tasteless. When an Elder shows his hands to someone, it's considered a huge sign of respect.
Most people know nothing about Shumi customs, so when the "gift" turned out to be an empty hand, the party was pretty confused. Squall figured it out by observing the Shumi behaviour before.
One, single, bit of conjecture mitigates your entire argument against it. Because you base your opinion of "Artemisia can't be Rinoa" on one single emotional display: Rinoa is in love with Squall. You even further this as, "Rinoa is kind, and will be forever."
Can you guess what that single point I have mitigates your contradiction?
I'll give you a few hints:
Artemisia is old. Very old. Centuries old at least...maybe more.
Rinoa is a brat. Young, selfish, egotistic, spoiled, scared, impulsive, stubborn and close-minded.
Rinoa over and over and over again states and shows her biggest fear; being left alone. She hates that. It infuriates her.
Junctioning Guardian Forces in Final Fantasy VIII causes memory loss. The more you junction, and the more powerful it is, the more you lose. And quickly. Just a few years of junctioning can lead to more than a decade of memory loss. Still yourself, still emotional, you still know your own personality, but you can't remember events or people or places or things. And it gets worse as time goes on.
Piece it together yet? How your idea that, "Rinoa can't be the big boss because she's nice and in love," can ultimately become negated?
She forgot. Between centuries (or more) of existence as well as her own access to at least one Guardian Force (Griever), she simply doesn't remember. She loved Squall, maybe even spent an entire wonderful life together. But he can't live for a millenia. He died. He left her. So did her father. And her friends. Over and over and over again. And she hated that. So what's a wildly depressed Time Controlling Sorceress like that to do, scared of the prophecy that someone would come to kill her and their name was "SeeD?"
And I'll say it again: that is only ONE point that refutes your contradiction. It is NOT the SINGLE "headcanon" bit of theory that supports the large amount of evidence in-game that points to Rinoa becoming Ultimecia, eventually.

Attendant (and Elder) went through all that because Attendant wants to be the next Elder. He's a jerk who feels he deserves it and is super-qualified for it. He's seen as being uncouth and unwise by the current Elder. But, Attendant could at least feel bad for making Squall go do all the work the ELDER was supposed to be doing (it was the whole point of this sidequest: motivate the Shumis to completing their task. Squall ended up running around the whole village doing all that work while the Elder + Attendant fucked around doing nothing because they're lazy). When confronted with this, Elder demands Attendant to go help with the statue, too, as punishment for talking about it.
The fact Squall is coming up with all the "reasons" about showing Shumi palm being polite and respectful, following that embarrassment of being present with nothing, and the juxtaposition of the rather crass dialogue after is supposed to be funny and entertaining. You're not supposed to take Squall's assumptions and reasoning as "FF8 Canon Lore."

The Elder explains it to you after Attendant leaves.

1. Elder has good intentions, but rather than just telling them to enjoy their stay, he tries to pass it off with further "gifting" by presenting them with nothing. A pointless and frankly arrogant display.
2. Attendant further tries to justify with arrogant and condescending display (even if it was not Elder's intention to be interpreted as such) with lies, that they're stupid for not recognizing how obvious it should be they're being graced with something amazing like seeing his hands.
3. Attendan also ends their interation with an apology (without stating he's apologizing) for what he feels was fucking embarrassing (because it was) by giving a Phoenix Pinion.
4. The two party members talk about how that was a load of bullshit, and ask Squall, "right?"
5. Squall comes up with some assumption nonsense to justify the foreign cultural exchange they just witnessed. It sounds educated and high-brow, so the other two buy it and remark, "Wow! Makes sense, i guess we were wrong! What a great guy."
6. Instantly followed up with Attendant stating, "What a sham." Which Elder agrees it was. He then justifies it as them "taking a break" instead of giving them any kind of actual reward for the LONG side-quest they just went through collecting stones.
7. Attendant calls Elder out on the bullshit.
8. Elder says fuck you, go finish the statue, no sleep until it's done, gtfo.
IT'S A JOKE. It's not real Shumi Palm Respect bullshit.
Again, you're ignoring the context of the entire quest and lore. The Shumi are extremely humble, peaceful and conservative people, who pretty much never say bluntly what they mean. You go through something similar with the Sculptor before, who lets you run around collecting stones only to later admit that it was just his way to make you see and appreciate their village. Attendant doesn't like the Shumi ways, so to him, it seemed stupid. Here's the Japanese explanation of the scene:

I actually more enjoyed explaining and reminiscing the scene via my posts than actually interacting with you, as you're too stubborn to admit that the "Shumi Tribe Elder Palm" being an ultimate sign of respect is mostly complete bullshit, as Attendant points out and Elder agrees. Even if it relates to the conservative nature of the tribe. And your Japanese explanation (from who knows where, copy pasted from some ff8 wiki, go ahead and link to me it's from the Ultimania guide) continues to simply frame that 4 minute cutscene, ignoring ALL the shumis in the village in their "speaking" animation, show their palms to you and talk with their hands moving about. The only one who doesn't is the Elder, meant to look refined and is simply placing his hands in front of him (a common cultural display that the individual is aware of his posture in front of guests and is making the effort to be polite).
Context, irony, fallcies or otherwise all point to this comedy of this scene. Elder succeeds in his plan to give the kids a little breather. Attendant breaks the 4th wall for the player to comment that "I did all that fucking work for this Shumi Elder model to show me his hand, wtf?"

Mind you, the part about letting the SeeDs experience a few moments of peace is true - that was the main reason and Squall correctly points it out ("they sincerely tried to make us feel welcome"). Attendant, however, is more like a normal human than Shumi in his nature, which becomes obvious later, when he declares that he wants to evolve into a human, while Elder notes that the Shumi and Squall's SeeDs are kindred spirits and equally bound by their inevitable fate. I actually agree that they might have exaggerated the gesture's importance a bit (which is more obvious in the Japanese version, where Squall adds the Shumis gave their welcome a playful touch), but your interpretation of Elder being a dick and Attendant being right is wrong.
That's Quistis' problem, though. She likes to think she understands people, but she doesn't because she never truly listens to them. Recall when they remiscence about Seifer in Galbadia; Quistis repeatedly gets his motivations and personality completely wrong, almost disappointing Squall.
