What’s even the point of Parallel Nightmare too, why not just use normal Nightmare?
Because she's from Another Dimension.
Probably a combination of Nightmare being dead (even when villains return, it's rarely exactly the same) and giving him the ability to open portals to Another Dimension.
But why? Why write an entirely new group of characters just so she could be called Parallel instead of Dark? She serve’s the exact same purpose a Mirror World Susie would serve, there was no reason to make an Another Dimension Susie with all the implications that comes with it.

Presumably because a Mirror Susie has no reason to exist (Susie would need to have been reflected in the Dimensional Mirror) and because Susie was already exposed to Another Dimension.
The nature of Parallel Woods and Parallel Kracko makes it a bit ambiguous if you need contact with a Jamba Heart piece to create a Parallel self and even if it does, the Jamba Heart came from Another Dimension anyway, so she would probably run into one.
You would have had a point if they hadn’t literally invented another Dimensional Mirror in the very same game. They could just have said Dark Taranza reflected Susie in it to create Dark Susie, but instead we get both another mirror, with accompanying new mirror clones, AND a whole new faction of characters that are essentially the exact same as the already existing faction.

Susie doesn't factor into the main plot of the game at all (does she even cameo?) so pulling her in just to make a mirror counterpart was probably more trouble than it was worth. Notice that Landia (who's also related to Another Dimension) also has a Parallel counterpart.
It's also possible (though ambiguously likely) that they had some idea of Parallel counterparts for Star Allies.
It's redundant, but Another Dimension seems like a weird, chaotic space anyway.

You get the Castle Village after "completing" the game. It's where the "postgame" takes place.
Not sure about the other one, but it should max out your tree, giving you a large supply of apples every 12 hours.

Like said, beat the final boss to get to Castle Village. If you don't want to know the boss' identity, you'll know who it is when the menu option says Credits instead of To The Village after completion.

The game has different versions of Landia and Susie. Susie's only presence is of her AD counterpart.
The Mirror can only create counterparts of whatever it reflects. You can argue that Landia would be easy to get in proximity of the mirror since, in the TKC universe, it seems to be a local guardian figure, but whether or not Susie even exists in that continuity depends on how heavily you put stock in the item descriptions. TKC's logic is weird, is what I'm saying. Though I suppose they could've done the same as D-Mind, so I'll conceede that they could've just had a Mirror Susie.
Still, there seems to be some actual purpose behind the decision at the very least considering that the two that got Parallel Counterparts are characters connected to Another Dimension. It doesn't just seem like they threw in the Parallel guys just for the sake of it, because in that case, just make them mirrors, which makes me question how long the concept for HiAD and Void Termina existed by the time TKCD came out.
