Money, what are you talking about with this "keep them safe" shit, not everyone is Geralt, and even he will often times sit one out and go on his way if it's not worth it in that particular instance.

But mostly, if you know the lore at all, you understand that they literally have no choice.
You generally don't choose to become a witcher, you're "stolen" at a very young age, and it just becomes your entire life, like it or not.
Assuming you even survive the whole initial process and training, anyway.
If you've been told since you were 5 years old "You're gonna roam around and kill monsters forever" and you we're drilled and trained for that sole purpose all your life, you'd just go around killing monsters too.
If you think about it, cat school witchers are actually really just the black people of witchers.
Even Letho and his buddies strayed from the path with the objective of getting back into witchin'.

Aren't witchers naturally restless and itinerant so they are always moving from place to place taking the monster hunting jobs because that's all they are good at? I seem to remember this conversation with Shani in Witcher 1 but I could be speeding too hard.
They don't have a choice usually.
The entire point is that at the point of the plot we're at, there's less and less of them and the few that remains want to do other shit.
Because being a Witcher is bullshit, the path is bullshit, and any remaining Witcher just wants to go in some remote location and take it easy.

I imagine if they make a new one, they'll probably just put it in the past. Much easier to justify more witchers than having a new batch be made, especially when the method for it is explicitly lost.

Fate. It's literally their fate to be witchers, and they can't escape from it. "No witcher ever died in his bed" is a reference to it, ie, you can't escape your fate.
The witchers were very important for centuries, at the time of Geralt monsters are rarer and magic is waning, but in Witcher III monsters start reappearing where they had been absent for awhile,
why don't they just get work as a king's bodyguard or something? it has to pay better than witcher's work

People revile Witchers so it usually isn't a good look for the King, if I recall correctly Foltest garnered much criticism for keeping Geralt on retainer. Additionally, Witchers and Sorceresses don't get along well usually, and Kings always have one of those on retainer too.

Witchers aren't that powerful normally. There is a bounty hunter in the books that hunts witchers, ans he's just a regular human. Even at the start of the short stories Geralt is already a fucking legend. And even then he's weaker than a wizard who has military training in his youth.

Witchers aren't book smart so they can't exactly have a lucrative normal profession except in rare instances like that one assassin Witcher who retired and started owning businesses or whatever he did.
So the only thing they're good at is killing. It's either kill humans or monsters for a living, or go work a peasant job and get bullied by the local peasants, but the peasants wouldn't even want them working with them in the first place.
