It's as hard as you want it to be. The base chapters are hard enough at first, and after you get some collectibles you can unlock two progressively harder versions of each level. I finished all of them because I liked the challenge. I would recommend the game, and if you dislike the story you can just ignore it.

It also had an assist mode that's basically cheat codes but without as much shame attached.

The DKC games are hardly like that. The few levels like that tend to be secret/special ones.
DKC is nothing like that aside from one or two stages. And even then, nothing aside from pits instantly kills you in DKC because you can take two hits.
