If you want to do proper drawings your fucked. But if you want to make sprite based games you aren't shit out of luck. Pixel sprites are something you should be able to do since you can draw things one pixel at a time. And if you're worried about things like anatomy in sprite games use the thousands of references that exist.
You're math and awareness of numbers is clearly solid since you have a software degree so think of your sprites in terms of numbers

I started purely by drawing references/tracing [it was horrible], pretty much only trying to get used to digital drawing [doing proper strokes and hand movement]

You're no better than 5 years old when you start drawing so I recommend just getting used to your muscle memory first before all that mumbo jumbo anatomy colour theory proportions hands hell etc.

There is no real proper guide because drawing knowledge is not linear, its more of connecting dots to dots of solving problem, like,

You want to draw animu face, you gotta know head anatomy, so you need to ; learn how does it work with real anatomy book, and a reference of how a good animu artist does it.

Just dont overwhelm yourself, do it one by one and you should naturally get used to it.
