You can, but for the normal ones, the timing window is incredibly narrow, so while possible, it's very impractical.
The one in front of the forest temple is easy to shank, though.

I wasnt even born when OOT came out

I was 12 when it came out, played it and didn't like it. Coming off ALttP and Link's Awakening, the 3D felt clumsy and weird, and it had this cutesy/childish aura to it that left a bad taste in my mouth. Going back and playing it later in life, I could deal with the gameplay enough to finish it, but it still doesn't rank anywhere fucking close to the "best game ever made" for me.

For me it's OoT Randomized.

There's nothing wrong with missing out on OoT. Zoomers will still enjoy games. Most of us missed out on Citizen Kane during it's era, and we still enjoy movies, even though we missed getting the ultimate experience at the time. Ocarina of Time, is, no doubt, the Citizen Kane of gaming, but I think people still still be ok. I get what you are saying though, and as someone who grew up on, and loves OoT (It's my actual #1 game), I feel bad for those who missed out, but I won't act like they are inferior because they will never have the best gaming experience possible.

Don't get me wrong, there will always be a special place in my heart for MNSG, but Goemon's Great adventure was a much better game and I still play it every now and then, as well as Mystical Ninja on SNES.
