There's a lot of those. 90% of 俺たちに翼はない is nothing but back-to-back comedy content, yet that comedy builds into other aspects of the story that eventually blossom into a crescendo of emotions and revelations that culminate in wholesome endings for each of the heroines.
To Heart 2 literally built an entire subgenre by drawing a near parody of the format up until that moment while building on top of it with some well paced surrealism that overcame logical barriers but complemented and cemented its place as one of THE kamige moege regardless, despite its flaws. It also takes its romance quite wholeheartedly and that shows. Fuck, Alicesoft is known for having this absurdist, almost parodic style of writing that nonetheless blurs the line and shifts into the real when shit hits the fan, it builds up characters and worlds with humor and almost a complete disregard for grounded logic in a bizarre experiment that tests the limits of suspension of disbelief (successfully, may I add) and gracefully executes tonal shifts into heartwrenching character drama, climaxing eventually into memorable greatness.
These are empty products made by people that have no cultural context or reference of the genre itself, its achievements and where it stands nowadays. It's the intellectual and creative equivalent to an edgy 8th grader trying to build his own postmodernist manifesto without even having read Plato or Socrates.

It's a romp of hilarity and fun but it also explores serious issues with the heroines' traumatic pasts and how Juicy Yuuji helps them move past it. It seems like most english visual novels can't understand how to mix comedy and a character driven dating sim, it's always done in an obnoxious, ironic way. They parody "tropes" that exist only among those that don't really engage with the actual genre, so that's why it blows up and becomes popular with that exact same crowd.

Melty Blood is pretty heavy on the story content, so I would say yes, it is a VN. SRW is also classifiable as a VN too in my opinion, but it is a strategy game first and foremost. VN is a loose classification for any game that can tell a story. In essence adventure games are VNs though, since many early VNs classified as such are just adventure games, like Eve Burst Error and Yu-No.

It seems the difference between adventure games and VNs in the English speaking community is more country of origin based. When you grow out of your teenage brain and see that there's grey between black and white maybe you'll understand. The impression I'm getting is that you're trying to find a way to justify your hatred for VNs by separating them from games you like

The VN market is far more competitive than the LN one mostly because despite being niche (or rather, thanks to it) its consumers have higher standards and demand products of real quality. Fuck, a constant critique in otaku circles towards low quality scripts is that they "read like LNs", last game that was hurt the most by that simple phrase was GIGA's Material Brave.
If anything the only part of VNs that's factually dying due to a shift in markets and target audience interests are moege, but all medium/big releases do better than ever (see Rance X) and there's small projects that hit the jackpot out of quality alone. It's a secular and niche market compared to what it was in the mid and late 2000s, but it's nowhere near dead, nor will it ever truly die. That's like saying noise prog or Avant Garde free jazz will die someday.

Ironic VNs are terrible because they're the most distilled form of this "everything I do, say, and watch/play must be ironic and self-depreciating because if I ever show genuine interest in a hobby I'll be labeled as cringe and my self-worth is entirely dependent on how others perceive me" mindset. The fact that a company is fully aware of this cancerous ideology so many people online these days subscribe to and is deliberately marketing a parody visual novel to them just to sell fast food isn't what upsets me. A lot of brands online in the last few years have realized acting snarky or posting memes is the easiest way to increase brand recognition with an always-online demographic. It's the fact that everyone is eating it up and begging for more that annoys me. When I was growing up companies trying to be hip and cool with the kids was seen as a pathetic attempt at outreach but now we've become so obsessed with irony that we treat a chicken joint like they're one of us just for including anime girls in their marketing.

tl;dr it's not the game itself that pisses me off it's that it's the perfect intersection between the worst type of people on the internet and the worst type of marketing on the internet.

This "ironic humor" that has taken over the Western world in the last decade after internet culture and memes went mainstream through social media is the most unbearable thing ever. People have gotten to the point where they just make jokes that are purposefully unfunny, and that's supposed to be the joke in and of itself. I only read LNs because 90% of anime seem to be based off LNs nowadays.

My taste is pretty broad and I still lost interest in anime as an industry, though. Even though I'm a moefag.
I watch everything from experimental shows like Yuasa's usual trips or shit like Kuchu Buranko to plain super vanilla not particularly well directed CGDCT things like Yuru Yuri, but it's hard to deny the quality of both visual direction and scriptwriting in the industry as a whole has lowered dramatically, and I don't think that's just me getting old.
And if it is, well, fuck. I can still watch Hidamari SketchxSketch or rewatch Gabriel Dropout without issue but shit like Machikado Mazoku barely keeps my interest. Doesn't help that since I learned japanese my backlog of VNs and games keeps growing exponentially and I also got a job, which cut severely on my free time. Lack of time forces me to be selective, and thanks to that I've just veered off into things that better hold my interest, though I'll watch the odd show or two a weekend when I just don't feel like doing anything else.
