A fun game, is this your first DMC?
Yes, I only played the demo for 5 like 4 months ago and nothing else DMC related.
I see, well you may miss out a bit on some references (there is a mission that is basically fanservice gallore for the first game) but i'd say DMC5 is a good game for newcomers, be sure to check the "Story of DMC" video on the main menu, it sums up the story pretty well in a couple of minutes.
I watched yt vids on the stories of previous games , but I skipped 2, that a problem?
Not at all, truth be told if it was up to Capcom they would pretend 2 never existed, and it doesn't adds ANYTHING to the story of DMC5.
But yeah if you got any questions before diving into it feel free to ask, It's my personal GOTY so far.

remember that jumping is your best dodge.
know how to constantly exceed/max act with every attack, charging your gun is the best way to use Blue Rose. V is pretty simple and straightforward, if you want to be invincible dodge left and right constantly. Dante is the most convoluted but just take it easy with him. try every style and stick with the one you like most, pick two weapons and two guns (or all of them if you want)
To add to your post, play in Devil Hunter difficulty, it says it's for "DMC veterans" or something among those lines, but that's a lie, Human difficulty is WAY too easy and enemies die way too quick for you to find the combat satisfying.

How do you pull of Max Exceed consistently? I tried it in the demo, but the only time I got to even two was a lucky shot.

Max-act is a skill you can buy in the upgrades shop, iirc the demo didn't had that skill unlocked.
But it's all about timing it correctly, I am talking out of my ass here but for the sake of explaining:
Imagine the attack has 30 frames of animation, if you press the exceed button between frames 13-17 frames you get a Max Exceed, if you press it between 10-20 frames you only get 1 pip, and anywhere else is basically a botched one.
Mission 18? It's my least favorite mission.
From a gameplay/bosses level? sure, but i just loved the references and the remixed songs.
The Psycho Siren remix is the best song in the game and a Top 5 song in the series, holy fuck.

A solid combat focused action game, but don't expect too much.

What is Capcoms end goal
It is obvious that whatever Capcom did for the HD collection made DMC 1-2-3 be so easy to port to anything that they may outright just be drag and drop the game files into a folder and work. Even if DMC2 sells one copy, that's one copy worth of money into Capcom's pocket. The HD Collection was obviously a marketing move to prep the ground for DMC5's annoucement which since it's already out, don't need to do anymore, which is why are launching everything separated.
Their entire Switch mindset is "Port 6th & 7th gen T & M-rated games to it and call it a day". I'm almost certain that the only new, curent-gen release they have on Switch is Mega Man 11.
Capcom is calling themselves the Adult Switch Company with DMC2 part of their Adult Masterpiece lineup.
The biggest bane to their plans is Nintendo fans sites are just refusing to report on their ports these days and forums are deleting discussing to hopefully hurt sales.
We just have to wait about 9 months and they'll put out 4SE on Switch and that will be worth something, but sadly they'll probably charge $40 for it. Maybe if we're lucky they'll port Asura's Wrath and/or God Hand too.
