Because of the gameplay focus. Honestly ubisoft in my opinion can pull it off and make a whole set of games with it.
The Bible is fucking huge if you read it and covering all the major stories will be extremely difficult. Honestly I think it will take an entire series to finish the Bible maybe taking 8 games over a decades time. Some sections will have combat and others won't. For the most part the game will play itself however with interactive cutscenes. Knowledge of the Bible will actually help you complete the game and give you death states if you fail.

I think this would be the best path for a vidya Bible game. Even Hollywood tends to avoid any other biblical stories. Just look at the shitstorm the movies featuring JC got. Could be a sort of Prince of Egypt route where it allows for some humor but the main theme is the conflict between two brothers.

Do you not remember Herod being devoured by maggots? Or that one Jewish couple that lied about their donations to Peter and the Holy Spirit and both dropped dead? You have to remember that the Gospels and Epistles are not books of History. They are closer to Psalms and Wisdom books. The Acts if the Apostles show that God is still pretty bad ass and still has the “Good is not nice” trope in effect.
