It takes less than a minute (not counting random encounters) to run around Wutai. Running around the cuban city in FFXV took a couple more minutes because you're controlling a proportional character in a proportional map. and there's probably going to be more stuff to do in the remake.

The battles seem to be longer judging from the scorpion boss. In game cutscenes are going to take longer because they can now dedicate more specific detail to them

Voice acting and dialog are gonna stretch the length of every cutscene since its not just text boxes appearing.
Factoring everything together that's where the extra time comes from.

FFXV has like a 1/5th story content that 7 but it still nearly the same amount of time to beat both.
They're probably going add in extra story stuff but not as much that it will significantly increase the time because that will bloat the shit out of game and Square enix wants to avoid another 15 fiasco

I don't know when the cut offs are, but 90% of game reviews are within the 1st week of a game's release. Most of the people reviewing don't even fully complete the game before reviewing.
