Their ip is the current model by which they make games and they don't really see much reason to come up with anything if they can implement a new design with old ip.

Look at how people react to most of them. For as much "demand" as there is to invest in new IPs, very few of them are actually successful.

4 or 5 games to a series is a far stretch from have 200 mario games.

Why take risks when you can release new Mario and Zelda games for decades after decades after decades and they're always best sellers? Nintendo consoles are first and foremost nostalgia machines for people who grew up with NES/SNES/N64 and want to play more of their childhood series that have been going on non-stop for 30+ years.

In the case of Astral Chain we don't know if Nintendo or Platinum owns the IP really but there's a strong case to say they do. But in reality, the important part is that they published it.
