invite some friends over or bring a setup to a local to introduce more people to the game, this part's really helpful if your social skills aren't that great because fighting games are a very social genre
you don't even have to play fighting games all the time, which is why i listed neo turf masters; it's a fun little golf game that eases some of the stress you may have with its beautiful spritework and calming aesthetic

It's understandable to not enjoy Tekken, it has a lot of moments that don't make sense and is extremely unfriendly towards beginners.
If you're looking for something simple, Street Fighter 5 is a fantastic starting point for fighting games
Anime fighters like Blazblue can also be good, but I haven't tried them myself
Part of getting into fighting games is to experiment and find out what you like

Unironically tekken and unist (soon to be uniclr) are your best bets until guilty gear 2020

Soul Calibur generally have amazing single player options. In terms of multiplayer unless they changed something recently though I feel getting a 2nd combo in is all you need to do to win. Health feel extremely short compare to most fighting games. I'm speaking of past experiences though.

A classic god tier fighting game will always be Melty Blood simply because of the massive amount of options and general QoL compare to AAA fighting games that can't even give you the basics without making it DLCs for triple the price.

Mortal Kombat has block buttons. I don't recommend it for that very reason.
Street Fighter V has the largest playerbase, and is Street Fighter as you remember it. Many complaints have come around from the game's balance, the graphics, and Capcom's general treatment of the franchise. Whether or not you care about it now is up to your own discretion. Throws are god.
Guilty Gear is all about offense, going as far to punish you if you aren't actively attacking the opponent. Several moves in Guilty Gear are plus on block, and pressure and damage are typically massive.
Blazblue is completely weird. It shares many mechanics with Guilty Gear albeit tuned to be a bit more gimmicky. I'm not the hugest fan of it and don't have too much experience, also someone decided to name a female character "Noel." Avoid Cross Tag Battle at all costs, play Central Fiction if you really want Blazblue.
Marvel VS Capcom: Infinite is dead but surprisingly good. It's horrible to look at and Capcom left it dead in the water, so expect no updates at all. If you really want Mahvel and some ideas that you'll never see in another fighting game again, check it out. It's a damn pity.
Soul Calibur 6 is a 3D/"Arena" fighter like Tekken, and I'm sure you've seen the waves upon waves of character customization posts. I've played it for a couple of hours and can say it's pretty fun, but I can't vouch for its depth quite yet.
UNIST and Melty Blood are both said to be pretty good, but I'm not going to play them. Had my fill with anime fighters, Guilty Gear was enough.

It appearing to run at 7 fps is what killed it as a fighter.

Vegeta went to Earth mostly for immortality but also for shits and giggles.
