There is basically 3 endings to the game, Pacifist, Neutral and Genocide, if you do any middle ground between not killing and killing you get a variation to the Neutral ending.

Just go with your gut on the first playthrough.

You'll be walled off from the pacifist ending. If you're a pacifist on your first playthrough you'll get the neutral ending the first time, but you can boot up from your last save to go get the pacifist ending.

It's the issue with containment boards. They eventually become their own beasts and removing them ends up creating bigger floods than the ones they were originally built to control

No official "order," but the most accepted way to play if you want to see all the content is neutral, pacifist, genocide. When your first run is pacifist you still get the neutral ending, but then you can load up your last save and go get the pacifist ending right after. Then start over and genocide. Genocide fucks up your game forever even if you do another pacifist. I highly recommend checking the game out if you're thinking about it.

It's nothing like them beyond "quirky RPG" (still having a very different tone than Earthbound) and having timed hits (again implemented very differently than in Mother 3).

It's just "Mother 2" in Japanese. Mother was in fact officially localized (as Earth Bound) but never released because they didn't think it'd be worth the cost of production and the SNES was right around the corner. They reused the Earthbound title for Mother 2 without really acknowledging it was a sequel because it was a JRPG in the 90s and absolutely nobody gave a shit about stuff like that. Mother 3 was also going to be Earthbound 64 when it was being developed for that console.

He's not actually "aware" in the same way (You) and Flowey are, he empirically knows what's going on with the "time loops" but doesn't actually retain memory of the reset timelines because he doesn't have Determination.
He knows this because he used to be a scientist researching the phenomenon, heavily implied but never outright stated to be one of the people working with the former Royal Scientist WD Gaster before the latter erased himself from existence (why Sans is still around when everyone else involved with Gaster was also ripped out of existence is anyone's guess). Anything beyond that is fan speculation, not without basis (eg, people speculate Gaster is literally related to Sans and Papyrus since the sprite widely assumed (but never outright stated) to be Gaster himself looks fairly skeleton-like and he carries the same naming convention (WD = Wingdings)) but not hard canon.

Sans doesn't know the details of previous resets (any more than the deja vu everyone else starts to get) but he's suspicious and constantly looking out for "anomalies" like you, and he gets information from you just by watching what you do, how you act and especially how you react to him and others.
For example, if you "get dunked on" during his fight and come back to fight him again, he just sees how mad you look and assumes you fell for the trick that he was planning to do from the start, he doesn't "know" or "remember" it because it never happened, because after it happened you just reset back to your SAVE.
