I understand why people like it but I don't. Don't have any nostalgia for it and the massive downtime between areas and the combat being kinda bland is pretty a big downside for me.

I always end up losing interest in the Ice Cavern. I can't warp back to a checkpoint using Farore's wind, so you really have to go through the whole thing in one go, which was something I never really had the time for.

I feel the same way. It has alot of merits, and is historically notable. However, I don't think it held up much and it has alot of issues, notably the framerate. Unfortunately, as the 3DS remake demonstrates, 30 FPS and below was a deliberate decision, which I feel hurts the game overall. The only genre that doesn't benefit from 60 FPS is maybe a turn based game, or a puzzle game.
