There is still 0 evidence left behind about Sou tricking Joe
In fact, if Sou tricked Kanna and told her to leave the card where she picked it, it would be difficult for Sou to grab the card and set it up so Joe would find it without Kanna noticing
Joe was one of the characters who entered the bar the most, so him just finding the card where Kanna left it would make perfect sense
Also during the trial Sou didn't point out Joe as the sacrifice, Sara(or Keiji) did
By the end of the first main game they are running out of time and Sou not even suggesting that Joe might be sacrifice is very strange if he actually knew that Joe was the sacrifice
It may be revealed later that Sou did it, but so far there is no solid evidence, it's all speculation

Reminder that as mastermind Gin knew what the end of the second sub game would be and he got himself to zero tokens on purpose so they'd need the least weight on the spikes to clear it.
