One of the things I liked most about Stronghold were the production chains, even if a lot of them were pretty simple.
Needing to get iron, then hammer it into weapons and armor, and then using that to hire a swordsman. Or making wheat fields, milling it into flour and then baking bread with it at a dozen bakeries.
Is there any game like stronghold that has some more in depth production chains, while also keeping the defensive building aspects? I know of some city builders that have some deeper production chains, but I haven't seen any with interesting combat.
I want to build a self-sustaining fortress city while invaders crash upon my walls.
No taxes is one thing, but what about a small gift? Go on...

I was too dumb as a kid to play the game properly so I spent all my time on it in the free placement mode or editor or something. Built my nice castle and would release wolves and bears to fight.
Same. Forgot to add that the AI is even dumber than it's predecessors as I managed to defeat every AI lord with around 20-30 swordsmen after I breached their castles.
They defend themselves in a weird way as the AI doesn't really group it's melee units around the lord and those that are in the keep run around like retards and a few try to 1vs1 your horde. Kinda like European bees when a wasp attacks them.
The fucking Caliph could easily burn 30 swordsmen.
I'll eventually get around to playing legends and SHC2, but boy was SH2 a wild ride and not in the good way.
I think they got caught up in that period where graphics were the #1 selling point. They lost focus on design or wanted to try fresh things. Staff have probably moved on since then, too.
I don't think this looks terrible but I never played Stronghold. It sure doesn't have the same SOUL that the original has.

Man, I remember the only reason me and my brother bought Stronghold 1 back in 2001-2002 is because we were just getting into computers and the computer we had was astronomically trash and couldn't run many games... turned out to be our all time favorite game even to this day. No other games in it's genre even come close.

Why is Stronghold 3 sandbox so lackluster? I only played it recently after playing the first many years ago and I swear it's worse in every way that I can remember.

I think I was 9 when I made my first and only map. I enjoyed playing the game on easy and being comfy but I wasn't good enough to make a knight army. So I made a map that started me with a giant castle and town.
I had a dozen of each production structure, had loads of houses, stables, everything. I had multiple of everything in the game. The enemy had nothing. I figured this was my chance to pick an AI like Saladin and crush him with a high tier army for the first time.
Then I start the game and realize that I can't get any recruits. Every time a new person spawned, he was automatically set to work in the bakery or something. I didn't understand what was happening. Before I could figure out how to fix it, the severely handicapped enemy had already enough troops to win. Probably my most embarrassing defeat in gaming.
I'm talking mostly about western Europe. In the feudal system yes, it wasn't the same everywhere and it didn't even exist everywhere or all the time. But the start of the middle ages is already marked with people fleeing the roman cities en masse in search for food, most of them ended up giving up their freedom in exchange for a living. In the early middle ages slaves was one of the export products of western europe. However you want to call it the majority of people in western europe during the entire middle ages were unfree. Serfdom didn't exist in the entire middle ages in strictest sense of the word but it existed in some way and evolved at different speeds, in different directions and in different ways in different locations.

Well I don't know, I've had fun up to this point but I'm stuck at a wall here. To complete the mission I have to kill them but they're on an impassable hill.
