I honestly can't pick which is prefer. J&D had great platforming and collecting, but J2&3 were loads of fun too. Even if they are completely different from the first.

I was quite surprised how far and well the art design, animation, graphics and dialogue in the Jak series still holds up. I feel there is very little that has aged with the games, besides the open world being fairly empty if not interestingly crafted.

No IP is safe. Given enough time EVERY "dead" IP will get a sequel or remake. Even fucking XIII is getting a remake.
I'm torn between wanting a sequel to the first in the same style or to the third, both are good but the setting is wildly different and have their unique charm.
Half Life 3 of course. But barring that either GTA6 set in 80s VC again or a full remake of VC. Just make it look as good as RDR2 and have better shooting. Maybe add swimming. I'd drop $60 on an exact remake like that, no new missions or anything. I'd take new stuff but the game was amazing as is.

precursor legacy was a good kicking off point, but 2 and 3 was where they hit their stride and perfected the game. Precursor legacy is the same exact game except

There was a Game Informer article years back about a possible new Jak entry and ND basically admitted if they did a new one it'd be nothing like the old ones and they'd want a more "serious" tone overall
