It is undeniable that there are some people who will never be able to enjoy a From game due to their level of difficulty, but that's ok. Not everything has to be for everyone.

I agree if there was an objective measure of how to rate game diffulty. Sometimes normal is easy, sometimes very easy or sometimes the way the developers really tried to balance the game properly. How can you know if you will perhaps play the game once and be done with it?

There's no way to know how difficult a game is for first day purchasers. Happens with any game.
But isn't the "fun" of the game is trying it out and find out about it yourself? If you feel the game is too easy, just change the difficulty. If they don't give you the option to change it mid game, then just restart. I'm sure it's not gonna be long until you feel that the game is too easy or too hard for you.
Video game is, in the end, a personal experience, they are different for every person. There's never an objective way to measure difficulties.

Europe got the game later than the rest due to localizing all the various languages
this delay gave them time rebalanced the extreme difficulty after complaints that it wasn't hard enough in NA/JP
subsistence/substance are re-releases in NA that included this rebalanced extreme mode, dubbed european extreme
it has little to do with europe's skill, it's just a rebalance
