PS1 original had full 360* control. - No rumble present either. - Performance: Original PS1: 30 FPS in world, 15 FPS in battles w/ 60 FPS menus (for limit breaks) - Remaster: World = 30 FPS, battles = 16 FPS but menus also update at 16 FPS now which makes it difficult to do limit breaks and causes input delays. - Overall performance is *worse* than PS1 because of the above
Square Enix want to separate you from your money with the least effort possible. and their fans let them take that money, they hand it over with no fucks given, in an ideal world fans would have demanded higher resolution backdrops, widescreen support and for all character art and battle scenes to be seamless with the pre rendered world, in a similar fashion to REmake.
Also the original supports 360 degree analog movement. The remaster is only 8 way digital input.

Lazy really is the word. If you've got the source code and assets, you can just spend like 20 minutes per texture blowing it up nice in photoshop and doing a little cleanup, a little flourish with some brushes, be done within a week.

That's because they're just using the original textures that didn't get a reduction in quality to make it run on older hardware. They already had the higher quality textures and didn't need to make new ones. For these older PS1 games that isn't an option. Especially when a lot of these older games no longer have their assets backed up (companies were bad at backing this stuff up way back when).
remasters in general are often done by people who had nothing to do with the original games development, laughably the job is very often outsourced to smaller, cheaper dev studios. The dev studios have ideas on how to make the game better and make changes that are so unbelievably wrong and against the core game that they think they did a good job.

Square Enix as a brand has a significant amount of loyalty, their remasters have all sold well, in spite of the fact that not a single one of them meets the standard even set by the Ocarina of Time remaster which fucks up a few things but overall does a good job at rebuilding the game to look the way you remember it and not how it existed. Even Sony's own remakes are significantly higher quality, just look at Medievil and Shadow of the Colossus, I don't like the way that the new games look, especially Medievil but that's mountains more effort for a game that won't sell anywhere near as well as the FF remasters. it is a bit light on content in comparison though I guess.
