Whenever people talk about Deltarune they usually praise the story or the characters or the music but personally I'm most impressed at the progress in game mechanics. Between Undertale and Deltarune, in a single game, Toby added battle animations, a party with multiple characters, combo moves, enemies visible on the map, splitting non-lethal tactics between mercy and sleep, a better timing minigame, a better status screen with more equipment, and even added environmental hazard so you can actually die outside of combat which adds a completely new layer of world interaction. The difference is jarring if you try to go back to Undertale after playing Deltarune. The two games have been released 3 years apart but it feels like 15 years of improvement.

Aside from what little story we have, that's really the meat for some people, they love the idea that they can change a life by showing a social outcast that someone still in fact cares for their well being. The fact that you get to play as a social outcast and how it seems to be a type of coming of age story makes the story a whole lot more appealing for other people.
