Can someone please educate me about this series? What games should I play first? What stuff is worth checking in SNK universe outside Kof?

Only thing really worth checking out outside of KOF is Fatal Fury series where Terry originates from so check that out if youre curious where terry actually comes from

KOF 98 and 2002 are probably the most popular and well regarded games. You can always find an army of South Americans playing it on FightCade. If you want something more recent, XIII and XIV are pretty good, but their online leaves a lot to be desired and XIV is pretty hard on the eyes. XIV or 98 are probably the easiest to jump into.
One thing to note is that KOF is kinda like smash in that it is actually a crossover game, being a mash-up of a bunch of different SNK properties, some that weren't fighting games, like Ikari Warriors, Athena, and Psycho Solider. Terry in particular's origin is the Fatal Fury series, which, as the trailer touches on, has been around since 91. As for what games to try, just grab an arcade emulator, download some roms and just fuck around. To just try a fighting game out isn't much of a commitment, assuming you already sort of know how those types of games work.
Other games to check out are of course the Metal Slug games, the Samurai Shodown games, which provide a very different flavor of fighting game, weirder shit like their old arcade sports games like Neo Turf Masters or motherfucking Windjammers are pretty good. SNK has a long history in the arcades, so there's lots of shit to discover.

Follow this timeline, just add KoF XIV at the end and you're set. KoF 98 and 2002 are Dream Matches, so they don't have a story but they're good games.

Play 98 and 2002UM. As for outside of KoF play Garou. Also, if you're interested in more SNK fightan after that, try the Samurai Shodown and Last Blade games.

Don't listen to anyone telling you to get the most popular titles like 98 and 2002 first. Start the series form the start with 94. If you really are allergic to old games start with 97. 98 is great but it is just an all stars game with all characters so far and good to play as well but it has no lore attached to it so it's not a good start, it will feel good to play but you will get confused at characters and series in overall.

About the other SNK games, there are metal slug which you can play all the neo geo games, the series get worse and worse with their newest titles as you go on though. Also avoid the gba title.
SNK has several fighting games with varying quality, The breakers and rage of dragons are dogshit for example but Waku waku 7 and the last blade are amazing. You would do better by emulating neo geo with all their roms to check out the games if you haven't.
