No, every person in fate has some type of origin for their soul that influences their personality and actions in subtle but significant ways. Basically, what your soul was before it took shape. Shirou's soul is literally a sword or a tool. You can use your soul's origin as a power but it can fuck up and possibly kill you. For example, Shirou could turn into an actual inanimate sword if he somehow fucked too much with his own soul. It's the reason why Kiritsugu Emiya could use his own rib cage in bullets to kill people better. His soul origin is the concept of severing and binding. This means his rib cage bullets physically severs anything it hit while binding it back which fucks up anything.

That's exactly how it's portrayed in the VN, the entire reason Shirou can win is that he's in Gil's face immediately and able to overwhelm him with superior swordsmanship and automatically neutralize the Gate of Bablyon.
Ufotable as usual goes for style and spectacle over everything else so instead we get stupid shit like Shirou flying through the air and Gil practically winning because they cannot stop jerking him off for his fanboys. Nah, not how it works. UBW houses a copy of every sword within Emiya Shirou's subconscious, which he can freely summon or swordspam without having to 'extract' it from a separate dimension like GoB. UBW route Shirou also got a kind of cheat code by seeing Archer's UBW and accidentally getting access to tons of legendary swords from across time and space that Archer saw as a Counter Guardian.
In other words, using swords doesn't require mana, but using non-sword items like Raw Anus still requires mana, and so does passively maintaining the Reality Marble against The World. Additionally, using the Noble Phantasms of swords like the flawed Excalibur he uses in some bad ends, or making his copies into Broken Phantasms, also uses mana.

Gilgamesh isn't completely incompetent at melee fighting. He's inferior to most, but his original method of fighting was grabbing the most appropriate weapon from his treasury and attacking head-on with it. He only started using swordspam when he encountered Enkidu, who criticized his newfound fighting style as inefficient and wasteful.
Generally, swordspam is just an opener. If Gilgamesh takes someone truly seriously, he'll start being more precise in how he uses his weapons. The problem is this method doesn't work against Shirou because Shirou can draw the exact same weapon even faster. In order to retrieve a weapon from Gate of Babylon, there's a very slight time lag. Normally this time lag isn't an issue, but since Shirou can do the exact same thing even faster, it becomes difficult to gain an edge. Gilgamesh started taking the fight more seriously as he got pushed back, but by then it was too late. By then, it had already became an endless repetition of "Gilgamesh draws sword > Shirou draws the exact same sword even faster > Gilgamesh has to defend against the sword flying towards his face > the weapons shatter upon contact > return to square one".

This doesn't really work every time. Note that while he's able to knock out six of Berserker's lives, he can't even kill Cu Chulainn once.
Archer's specialized primarily in sniping from long distances. In melee combat, he's usually stuck on the defensive, waiting for an optimal chance to counter. In an average melee confrontation against the likes of Saber or Lancer, both of them have any number of weapons they could use to kill Archer. Archer only has one. A typical melee fight for Archer boils down to him gambling everything on a single optimal chance to turn the tables.

Gilgamesh is on the defensive the moment Shirou makes it a swordfight, they're just shattering Noble Phantasms against each other, and it's just a matter of Shirou being that much faster at replacing them. By the time he goes for Ea he's lost too much ground and Shirou just cuts his arm off, he tries to run again but Shirou is able to catch up and right as he's about to cut him down the Reality Marble collapses and the fight becomes moot because Gilgamesh is suddenly engulfed by the void the Grail summons.

Despite Heaven's Feel Normal end doing all in it's power except directly state it, Shirou can't actually trace Excalibur because its a Divine construct.
Apparently he can make a very shitty sword that is basically a knockoff excalibur but is so different from it that it can't even really be called Excalibur.
