Sometimes no if it's a boss depends on the context of the specific boss skeleton.

I think it depends on how realistic and how close to the camera the enemies are.
I haven't played Dark Souls but even though it has skeletons I doubt any of them throw bones. Am I wrong?

Seems like it would make a cool versus game. 3rd person and you're all skeletons throwing your limbs at each other, or collecting the limbs of others to use in attacks. You can control your own limbs and use stuff like your arm to drag other skele pieces back to you. Collecting enough chest skele bones will make you a beefcake heavy knight skeleton. While collecting lots of arm bones will allow your skele punch to be really fucking strong or let you launch your arm bones long distances by making a skeleton bowstring(bonestring) to pull back and fire that fucker into the stratosphere
