spawn or travel to top right camp at the start
go down the lava way to pick up the waterspore slinger then head up to Velk
Velk should be walking to or near the place with all the crystals
clutch claw onto the left side of his head (careful, you might grab onto the wind and mess double crash up)
press Circle / (B) to direct him to a wall
unload your slinger with RB and he should run into the wall for high damage
don't start attacking, just head to the Stone slingers near the mining point and load it
run back to it and aim at his head when he starts to get up
he should be in the initial roar stage when he does get up
if he is already facing a wall, unload again when you're mounted

then check for signs when you can slinger crash again
you should be able to do it like 4 times
watch your stamina too

You could actually do that even while mounted in vanilla World too. Instead of doing the stabbing while mounted you could crawl to the head and crystalburst the fucker right in the face. 1-2 shots is a topple.
