As much as I like the artbooks, I've never played Etrian Odyssey. Where should I start? Also do they emulate well?
The 3DS games emulate well at the very least. Honestly, starting with any 3DS title (aside from X) would be fine. Hell, any game other than the original EO2 on the DS is an alright starting point.
III or IV are fine. Since you want to emulate play III because I have no idea how 3ds emulation is right now.

The best one I have is the Odin Sphere: Leifthrasir one, but I don't have many.
I miss when you'd buy physical copies of games as a kid and they'd always come with a manual inside. They often came with art from the game or tips n tricks. It was always fun reading the manual in the car ride home after going shopping with mom excited to play the game when we got home. I was always happy when I knew her bf would be staying the night because she would buy me a new game to keep me busy.
A shame about the gameplay, though
