The version in the network test was pretty elaborate, but I'm not sure I remember it letting you make drastic changes to every facial feature. There were a lot of make-up or tattoos you could apply to make a face look different though. Someone else might have video.

Hey user sorry for the super late reply if you're still there, I went ahead and played around with it a lot more anyway and despite some of the limited aspects I did manage to play some tricks with the makeup and face paint. Been on a single character for a couple hours and I'm getting somewhere where I'm at the very least a little satisfied. I just played through the tutorial dungeon.
Kinda janky, some weapon's hitboxes don't match what the animation does, but it was fun.
The music and script certainly give a bit more of a heroic feel than what Souls usually goes for, so I find it refreshing. Feels like games barely call you a hero anymore.

It's definitely smoother compared to the demo and enemies don't feel like meat sponges when you hit them anymore. That said, there's still something off about the hit effects I can't quite put my finger on. Still, it looks like they tried to improve things so I'm looking forward to the full version a bit more now.

I'm talking about stuff like UI, skill effects, stats etc. Like were some weapons buffed/nerfed?

Companions have new dialogue and new attacks. The dialogue where you return to bonfire after dying is cute. They also mark enemies on the mini-map when you first encounter them. Bayonet got buffed. Bullets actually stun now. Blah blah rest of the small details are in patch notes.

I think they said bayonets have better aim for small/flying targets too.

I was mainly focused on the performance since that was my biggest issue with the Network Test so I didn't try out absolutely everything. I just did a quick run through the main story area and then the Depths which only took about an hour and a half.

They said they changed the UI to make it less intrusive but I don't remember it bothering me in the network test so I'm not sure what they did to it.
Dodging and canceling attacks is a lot more fluid along with the general pace. In the network test it felt clunky as fuck.
Enemy behavior and general animations seemed to have gotten touched up. They were really jittery in the network test and felt like they would just throw stuff out with little wind-up or tells, especially the bosses. But now you can react to things better and they feel more organic.
Mostly used one-handed sword so can't comment on other weapons.
Might just be me, but the Blood Arts actually feel usable now. In the network test there wasn't much of a reason to use them in my opinion, but now they deal decent damage and since enemies actually react to attacks now they're good for stunning them while dealing damage.

Overall, from a technical standpoint at least, it looks like they genuinely listened to criticism and tried to improve things. The network test turned me off because of how jank it felt but this demo made me look forward to the game again.

It was pretty fun. Same as the beta but unfortunatelt they shortened the dungeon and just made it in general easier. The final boss of the demo took a few tries but other than that it seems like they rebalanced how much health and damage everything has/ does. Game journalist mode it seems.

I bought GE3 for Phym and she's the best daughterfu of any game. If I know how the GE project team works, IF Io dies, she will "die" halfgame or almost at the end and in a DLC you will be able to get her back.

That's a shame though because the beta was well tuned. It took a bit of doing. You had to learn the bosses to some extent. This time the fights were over before I felt like I'd learned anything. Some of them I wasn't sure it was even a boss fight. They should put it back how it was or it won't be satisfying to play outside of character creation.

Game is 6-7 at best. If you want a ‘decent’ upcoming souls game, you might want to go with the surge 2. Previews look like it might be fun and they learned a few things from the first game. Code Vein is a waifu anime souls and there’s nothing wrong with that every once in a while
