The only point in the story where she actually admits to being wrong for lying about being pregnant is on the Rin route.
The new C ending is built on the idea of Catherine and Vincent reconsidering if they want to try a more committed relationship and wishing they had met each other at different point in their lives.
Rin is a boring character who undergoes no development and is just there to add extra weird shit whose best addition to the plot is indirectly causing the New Catherine Ending.

I'm not saying it was handled perfectly but I'd say with the addition of Rin and the new endings for the original 2 love interests, it went from Freedom vs Order to Freedom vs Order vs Personal Growth. The new endings for C and K are more about the actual growth of the girls than Vincent which I like.

If you actually consider Catherine's actual character background it actually fits rather nicely: the thing about Catherine's character is that she says she's all about freedom and living how you want, yet the only reason she is seducing a bunch of men is part of her designated role and job and what her own society and upbringing expect of her, this is also why her misdeeds and weird actions make more sense in retrospect since she's a demon.
In the original game she's actually 'living freely' when she just starts hanging around Vincent and has started developing feelings for him so just spends times with him instead of seducing other men.
The New C ending is just taking this a step further, Catherine finds a deeper personal freedom by breaking away from her role and life as a succubus and living a normal human life with Vincent.
