What the Dwemer did wasn't precisely Zero Sum. The Dwemer transmogrified themselves to be the skin of Numidium, which would proceed to be a device that would enforce their order and logic on Mundus. While they gave up/lost their ability to conceive themselves as individuals, this loss was more concentrated then what is typical for Zero Sum. Instead of losing themselves in the entirety of the universe, they only lost themselves within a single component of it.

The Dwemer had a sort of psychic internet that every single dwemer was connected to. This allowed information to be easily passed between all of them very quickly. When Kagrenac struck the heart and obtained information from it, which caused him to zero sum. This information spread through the network, causing every other dwemer to zero sum as well. Yagrum wasn't affected because he was in another plane, so he wasn't connected to the network.

Pretty sure the part about them physically becoming the skin of Numidium is just kirkbride fanfiction though.
