Deku nuts stun them. Hell, you can just use a well timed jump attack to deal double damage. Fight goes even faster with Deku sticks.

It was the first 3D Zelda in a time period when 3D games had only just become the next big thing in gaming (yeah 3D games already existed but they didn't really hit their stride until the N64/PSX/Saturn era). The combat was revolutionary for the time but now that 20 years have passed and they've spent several games refining the combat, no shit it feels simplistic now.

And to add to user's post if you hold your shield against Lizalfos early on they'll burn it and kill you anyway. OoT combat isn't deep for today standards but also not shallow as people are making it
