For analog triggers, you could always rebind them to "half press" and "full press". On a Switch controller, use L and R (the bumpers) for "half press" and ZL and ZR for "full press". Then you can rebind the GameCube "Z" button to Select, since 99% of GameCube games used it as a menu button.
